Stuffed Zucchini Blossoms with Feta

Ingredients

  • 16 zucchini blossoms
  • 200 g feta
  • 5 tbsp flour
  • 2 tbsp Cornstarch
  • 2 Eggs
  • Pepper
  • nutmeg
  • mineral water
  • oil (for frying)
  • coarse Sea salt

Instructions

    Wash the blossoms gently and pat dry. Carefully open the cups and remove the stamens with tweezers. Cut the feta into 8 pieces, then halve each piece. Place them in the blossom cups and fold the leaf tips over carefully.

    Whisk flour, cornstarch, eggs, pepper, nutmeg and a splash of mineral water into a thin batter. Heat oil to 160°C. Dip portions of the stuffed blossoms into the batter and fry for 3-4 minutes until golden brown. Drain on kitchen paper and sprinkle with sea salt before serving.
