Radish- Potato Salad with Quark

Ingredients

  • 800 g potatoes
  • 1 bunch radishes
  • 2 stalks Parsley
  • 2 tbsp sesame seeds
  • 2 tbsp spring onions
  • 100 g yogurt
  • 100 g quark
  • 2 tbsp chives
  • 1 tbsp Lemon Juice
  • 1 pinch sugar
  • Salt
  • ground pepper

Instructions

    Wash, peel and boil the potatoes in salted water for about 30 minutes. Drain, let cool slightly, then cut into cubes. Wash and trim the radishes; slice them thinly, then cut into sticks. Wash the parsley, shake dry and finely chop.

    Lightly toast the sesame seeds in a dry pan. Wash, trim and slice the spring onions into rings. Set aside some of each for garnish along with the radish pieces.

    Whisk together yogurt, quark, 3-4 tbsp water, chives, lemon juice and sugar to make the dressing; season with salt and pepper. Toss the remaining salad ingredients gently with the potatoes, then top with the reserved garnishes and extra chives before serving.
