Ingredients
- 50 ml olive oil
- 2 small fennel bulbs
- 1 onion
- Salt
- Pepper (freshly ground)
- juice of one orange
- 1 tbsp finely chopped basil
- 8 slices Parma ham
Instructions

Wash, trim, halve fennel lengthwise, remove the core and slice into thin strips. Peel and dice the onion.

Place fennel and onion in a bowl. Whisk olive oil with orange juice and a pinch of pepper, then combine with the vegetables. Let stand for at least 1 hour.

Serve in small bowls topped with ham slices and sprinkle with basil.
