Ingredients
- 400 g radishes
- 400 g daikon radish
- Salt
- 4 EL white balsamic vinegar
- 4 EL rapeseed oil
- 1 pinch sugar
- 3 cm cucumber
- 4 tsp Keta caviar
- herbs for garnish (chives and watercress)
Instructions

Wash, trim or peel the radishes and daikon, then finely grate them. Place each in a bowl and mix with salt; let stand for about 15 minutes to draw out water.

Meanwhile whisk vinegar, oil, salt, and sugar for the dressing and adjust seasoning. Wash cucumber piece, halve lengthwise, remove seeds, and finely grate it as well.

Squeeze excess liquid from the grated radishes and daikon, then fill glasses with them. Drizzle dressing over the top and garnish with cucumber, keta caviar, and herbs before serving.
