Ingredients

  • 2 tbsp oil
  • 2 tbsp white wine vinegar
  • 2 tbsp yogurt
  • 0.5 tsp mustard
  • 1 pinch sugar
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp chopped parsley
  • 1 bunch radishes (peeled, washed, quartered)
  • 0.5 bunch spring onions (peeled, washed, sliced)
  • 2 leaves lettuce (washed and chopped)
  • 1 handful fresh birch leaves (young, washed and trimmed)

Instructions

    Whisk together oil, vinegar, yogurt, mustard, sugar, salt, and pepper to make the dressing.

    Combine radishes, parsley, spring onions, lettuce, and birch leaves; arrange on a plate and drizzle with the dressing before serving.
