Ingredients
- 1 large radicchio
- 1 handful of watercress
- 2 ripe pears
- 4 tbsp chickpeas (canned)
- 100 g Gorgonzola cheese
- Olive oil (extra virgin)
- balsamic vinegar
- Salt
- freshly ground pepper
Instructions

Wash, trim and tear the radicchio into small pieces. Shake dry the watercress after washing. Wash the pears, halve them, core and slice thinly across the grain. Roast the chickpeas in a pan without adding fat. Crumble the Gorgonzola.

Arrange radicchio, watercress and pear slices in four bowls. Sprinkle with roasted chickpeas and crumbled Gorgonzola.

Prepare a dressing from 6 tbsp olive oil, 3 tbsp balsamic vinegar, salt and pepper, then drizzle over each bowl or serve in small side dishes.
