Ingredients
- 3 chicory leaves
- 0.5 radicchio
- 50 g pecorino
- 2 pears
- 25 g watercress
- 60 g walnut kernels
- 3 tbsp red wine vinegar
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
Instructions

Wash and trim the chicory, set aside 12 nice leaves, cut the rest into fine strips.

Dice the pecorino into small cubes.

Wash the radicchio, split into leaves, and tear smaller pieces if needed.

Wash the pear, quarter it, remove the core, and slice into thin wedges.

Wash the watercress and shake dry.

Combine all ingredients with walnuts and watercress in a bowl.

Whisk vinegar, oil, salt, pepper, and sugar; toss with the salad. Taste and serve.
