Ingredients

  • 2 small stalks of leek
  • 2 small pears
  • 1 head of radicchio
  • 60 g dried cranberries
  • 50 g walnut kernels
  • 200 g grainy cream cheese
  • 3 tbsp white wine vinegar
  • 2 tbsp walnut oil
  • 1 tbsp Sunflower oil
  • 0.5 tsp medium-hot mustard
  • Salt
  • ground pepper
  • sugar

Instructions

    Clean, wash and slice the leek into rings. Wash the pears, quarter them, remove the core and cut into sticks. De-stem the radicchio, wash it and shake dry. Place two large salad leaves on each plate.

    Distribute the leek, pear, cranberries, and roughly chopped walnuts over the leaves. Add dollops of cream cheese. Whisk together vinegar, oil, mustard, salt, pepper, and sugar to make a dressing. Drizzle over the salad just before serving.
