Ingredients

  • 0.5 Papaya
  • 0.5 green Galia melon
  • 12 lychees
  • 100 g coconut flakes
  • 4 baby pineapples
  • 2 tbsp lemon juice
  • 1 tbsp powdered sugar
  • 1 tbsp freshly chopped mint

Instructions

    Halve, pit, peel and dice the papaya and melon. Peel, halve and pit the lychees as well. Toast the coconut flakes in a dry pan until golden brown. Remove and set aside.

    Cut off the tops of the 4 baby pineapples and hollow them out, leaving a 0.5 cm rim. Mix the fruit with lemon juice, sugar and mint, then fill the hollowed pineapples. Sprinkle with toasted coconut flakes before serving.
