Raclette with Mushrooms and Bacon

Ingredients
- 250 g Oyster mushrooms
- 250 g shiitake mushrooms
- 250 g button mushrooms
- 1 onion
- 1 Garlic clove
- 1 bunch spring onions
- 1 bunch parsley
- 300 g butter cheese
- 100 g bacon
- 1 tbsp Olive Oil
- Salt
- white pepper (from the mill)
- 1 tbsp sherry vinegar
Instructions

Scrub oyster, shiitake and button mushrooms with kitchen paper, clean them, trim stems and chop into small pieces.

Peel and finely dice onion and garlic. Wash spring onions, cut into thin diagonal rings.

Rinse parsley under cold water, then finely chop. Arrange spring onions and parsley separately in bowls. Slice butter cheese into skillet-sized slices and arrange on a serving plate.

Dice bacon. Heat oil in a pan and fry bacon until crispy. Stir in mushrooms and cook about 2 minutes. Add onion and garlic, season with salt, pepper and sherry vinegar.

Transfer mushroom mixture to a bowl and arrange remaining ingredients around the raclette device.

Preheat the raclette appliance. Fill each small pot with some mushroom mix and spring onions. Sprinkle parsley on top and cover with cheese. Bake until golden brown in the raclette.
