Raclette with Mixed Pickles

Ingredients

  • 1.5 kg potatoes
  • 1 tsp salt
  • 1 jar dill pickles
  • 1 jar pearl onions
  • 1 jar baby corn
  • 1.5 kg boiled potatoes
  • 1 kg raclette cheese (200-250 g per person)

Instructions

    Wash the potatoes thoroughly.

    Fill a pressure cooker with 1 tsp salt and 0.25 l water, add the steaming basket and fill it with potatoes. Remove from stove, heat until the water starts to boil, dry the rim of the pot, close the lid, push the lever up, continue heating until the valve rings are up, reduce temperature by two thirds, and cook for about 10-15 minutes depending on potato size. Carefully steam off and place on the hot raclette surface, keep warm.

    Drain the mixed pickles and arrange them in small bowls.

    Prepare the boiled potatoes as instructed and keep warm on the raclette surface. Remove rind from the cheese, slice it, and arrange on a plate.

    For serving, put 1-2 slices of cheese into the raclette pan and melt in the grill. Peel the potatoes, place some mixed pickles on the plate, break them slightly, and pour melted cheese over them. Eat immediately!
