Ingredients

  • 1 old-fashioned roll
  • 1 Shallot
  • 1 Tbsp clarified butter
  • 500 g mixed ground meat
  • 1 egg
  • 1 tsp Mustard
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp clarified butter
  • 300 g cherry tomatoes
  • 250 g raclette cheese (sliced)

Instructions

    Soak the roll in water. Peel and finely chop the shallot, then sauté it until translucent in hot clarified butter.

    Mix the ground meat with the drained roll, egg, chopped shallot, mustard, salt, and pepper to form a dough. Shape into ping‑pong ball sized patties and fry them in hot clarified butter for about 8 minutes per side until golden.

    Wash the tomatoes, halve them, and season with salt and pepper. Preheat the raclette grill. Arrange the meatballs and tomato halves in small raclette pans, top with cheese slices, and bake under the grill until the cheese melts. Serve with field salad.
