Ingredients

  • 500 g large cleaned mushrooms
  • 1 tbsp Lemon Juice
  • 1 Shallot
  • 1 Tbsp clarified butter
  • 200 g mixed ground meat
  • Salt
  • ground pepper
  • 2 tbsp parsley
  • 200 g raclette cheese slices

Instructions

    Clean the mushrooms, carefully twist off stems and finely chop them.

    Drizzle the mushroom caps with lemon juice.

    Peel the shallot, finely chop it and sauté in hot clarified butter until translucent; add the ground meat and chopped stems, cook breaking up the mixture while stirring, season with salt and pepper, then fold in parsley.

    Fill the mushroom caps with the meat mixture, place them in raclette pans, top with cheese, and bake in a hot raclette appliance until the cheese melts and turns slightly golden.
