Ingredients
- 160 g rabbit back fillet (2 rabbit back fillets)
- Salt
- pepper (from the mill)
- 2 small red onions
- 2 tbsp olive oil
- 100 g Red lentils
- 200 g fresh spinach leaves
- 2 Garlic cloves
- 250 ml vegetable broth
- 2 tbsp plain yogurt (or sour cream)

Rinse and drain the lentils. Wash, rinse, and trim the stems of the spinach. Peel the garlic cloves.

Heat the remaining oil, sauté the lentils and crushed garlic over medium heat for a short time. Add the broth, bring to a boil, then cover and simmer gently for about 10 minutes. Season with salt and pepper. Add the spinach and cook for another 2 minutes.
