Cod with Vegetables

Ingredients
- 400 g cod fillet
- 1 orange
- 3 zucchini
- 2 large carrots
- 3 tbsp freshly squeezed orange juice
- 5 tbsp white wine
- 5 tbsp butter
- 1 tsp Cornstarch
- 1 bunch spring onions
- Salt
- Pepper
- 1 tsp ground coriander
- coriander leaves

Wash and pat dry the cod fillet. Season with salt, pepper, and drizzle with lemon juice. Set aside. Wash and chop the spring onions into pieces. Wash, halve, and cut the zucchini into sticks. Wash, peel, and slice the carrots into rings. In a pan heat 3 tbsp butter, sauté the zucchini, spring onions, and carrots for about 10 minutes. Dissolve the cornstarch in a little water, pour over the vegetables with orange juice and white wine, and simmer for another 3 minutes. Season with salt, pepper, and coriander.

Heat the remaining butter and gently sear the cod fillet on both sides for 2-3 minutes. Peel the orange, remove all white membranes, and slice into rounds. Place an orange slice on each side of the cod, serve with the vegetables, and garnish with fresh coriander leaves.
