Ingredients
- 1 Green Chili Pepper
- 1 Garlic clove
- 2 sprigs sage
- 1 sprig rosemary
- 1 tbsp Lemon Juice
- 3 tbsp oil
- a pinch ground coriander
- a pinch ground cumin
- Salt
- black pepper (freshly ground)
- 4 veal cutlets (about 200-250 g each)
- sage (for garnish)
- rosemary (for garnish)
- 4 large oven potatoes (with sour cream)
Instructions

Coarsely chop the chilies, peel and finely mince the garlic. Wash, dry and roughly chop the herbs. Blend everything with lemon juice, oil and spices in a blender (or crush finely in a mortar). Season with salt and pepper. Place the cutlets and marinate in a freezer bag in the refrigerator for 1-2 hours.

Either grill on a hot grill or cook in a lightly oiled grill pan, searing each side for 1–4 minutes (cooking time depends on desired doneness).

Plate on dishes with sage and rosemary alongside one oven potato, sprinkle with pepper, serve hot.
