Quinoa Vegetable Salad

Ingredients

  • 175 g quinoa
  • 1 onion
  • paprika (one red and one yellow)
  • 1 cucumber
  • 1 Zucchini
  • 80 g olives
  • 2 tbsp parsley
  • 1 Garlic clove
  • 3 tbsp orange juice
  • 5 tbsp Lemon juice
  • 5 tbsp olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Bring a pot of salted water to a boil and add the quinoa. Reduce heat and simmer for 15 minutes, then drain.

    Peel the onion and dice it into small cubes.

    Wash the peppers, halve them and remove seeds and stems. Cut into 1 cm cubes.

    Wash the cucumber and slice it.

  5. 5.

    Wash the zucchini, trim it, and cut into small pieces.

    Slice the olives.

  7. 7.

    Combine prepared vegetables with chopped parsley, olive oil, orange and lemon juice. Peel the garlic and press it in. Season generously with salt and pepper.
