Shrimp Pasta Salad

Ingredients
- 500 g spaghetti
- 1 honeydew melon
- 1 orange (juice only)
- 1 lemon (juice only)
- 4 tbsp olive oil
- 16 shrimp (peeled, ready to cook)
- 1 Garlic clove
- 1 bundle arugula
- Salt
- a pinch sugar
- black pepper (freshly ground)
Instructions

Cook the pasta in plenty of salted water according to package instructions until al dente. Rinse under cold water and drain well.

Halve the melon, remove seeds, peel, and slice into thin strips. Whisk together the juices, sugar, salt, and pepper to make a dressing; stir in 1 tbsp oil.

Peel and finely chop the garlic, mix with remaining oil and pepper, then marinate the shrimp. Wash and trim the arugula.

Toss spaghetti with melon and dressing, taste and adjust seasoning. Shape pasta into nests on plates. Sauté shrimp in a hot pan for about 2 minutes per side. Place shrimp atop the pasta, garnish with arugula, and serve.
