Ingredients

  • 600 g tomatoes
  • 0.5 cucumber
  • 1 red bell pepper
  • 2 yellow bell peppers
  • 5 sprigs flat-leaf parsley
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp white wine vinegar
  • 2 pinch sugar
  • 6 tbsp Olive oil
  • flat-leaf parsley (for garnish)

Instructions

    Remove the stem ends of the tomatoes. Wash, halve and core them. Dice the flesh. Wash the cucumber and dice it as well. Wash, trim, and cube the bell peppers.

    Wash the parsley, shake dry, and cut the leaves into strips. Mix the tomatoes, cucumber, bell peppers, and parsley. Refrigerate until serving.

    Just before serving season with salt and pepper, combine with vinegar, sugar, and olive oil. Divide into four glasses and serve, garnishing with parsley leaves.
