Ingredients

  • 250 g quinoa
  • 500 ml vegetable broth
  • 1 Spring onion
  • 500 g mixed cocktail tomatoes (red, orange, yellow)
  • 1 bundle radishes (~250 g)
  • 1 red bell pepper
  • 60 g black olives
  • 4 tbsp argan oil (or nut oil)
  • 2 tbsp apple balsamic
  • 1 tsp Honey
  • Salt
  • Cayenne pepper

Instructions

    Rinse the quinoa thoroughly in a sieve to remove bitter compounds. Bring the broth to a boil and add the quinoa, cooking for about 15 minutes over low heat.

    Wash, trim, and slice the spring onion into fine rings. Add it during the last 5 minutes of cooking and simmer; then drain any excess liquid if desired.

    Wash and halve or quarter the tomatoes. Wash, trim, and thinly slice the radishes. Wash the bell pepper, remove seeds and skin, and dice about 1 cm cubes. Drain the olives.

    Whisk together the oil, vinegar, honey, salt, and pepper. Combine the quinoa with the vegetables and dressing, season to taste, let rest for about 30 minutes, adjust seasoning again, then serve.
