Lemon Green Bean and Potato Skillet

Ingredients

  • 250 g green beans
  • Salt
  • 750 g mostly firm potatoes
  • 1 Tbsp clarified butter
  • 1 Garlic clove
  • 0.5 bunch spring onions
  • 1 small lemon
  • Pepper (freshly ground)

Instructions

    Wash and trim the ends of the beans, cutting them into about 3 cm pieces. Blanch in boiling salted water for about 5 minutes, then cool under cold running water and drain.

    Peel, wash, and cut the potatoes into roughly 2 cm cubes. Heat the clarified butter in a large non‑stick skillet and fry the potatoes, turning occasionally, for about 12–15 minutes.

    Meanwhile, peel and finely chop the garlic; add it to the potatoes and sauté. Clean and slice the spring onions into thin rings. Rinse the lemon under hot water, dry, zest or grate the peel.

    Add the beans and cook for about 5 more minutes until the potatoes and beans are tender. Season the skillet with salt, pepper, and lemon zest. Garnish with the spring onion rings before serving.
