Quince Syrup

The wonderfully fruity and slightly tart quince syrup from Spoonsparrow is perfect for refining drinks or desserts.

Ingredients

  • 500 g ripe quinces
  • 1 cinnamon stick
  • 2 cloves
  • 1 star anise
  • 200 g whole cane sugar

Instructions

    Sterilize the glass or bottle by boiling it in a water bath for about 10-15 minutes.

    Wash, quarter, seed and dice the quinces. Place them in a pot, cover with water, and simmer gently for 40 minutes.

    Transfer the fruit and liquid through a cloth into another vessel, squeezing out the juice. Bring the collected juice to a boil with the spices and whole cane sugar. Simmer the quince syrup for 15-20 minutes, strain again, pour into a sealable bottle or jar, let cool, and seal.
