Quince Plum Cake
The fruity quince plum cake from Spoonsparrow is perfect for the weekend!
Ingredients
- 400 g spelt flour
- 1 pinch salt
- 0.5 loaf yeast (21 g)
- 160 ml lukewarm milk
- 80 g Butter
- 60 g whole grain sugar
- 1 egg
- 200 g spelt flour
- 100 g Ground Almonds
- 150 g whole grain sugar
- 150 g melted butter
- 200 g quince jam

Mix spelt flour with salt in a bowl, press a well in the center, crumble yeast into it and stir with 4 tbsp milk. Dust the edges with a little spelt flour and let rise covered for 15 minutes in a warm, draft-free spot. Then add butter, whole grain sugar, remaining milk and egg, knead into a smooth dough, cover and let rise another 45 minutes.

Preheat oven to 180°C (fan 160°C; gas: level 2–3).

For the crumble mix spelt flour with almonds and whole grain sugar, knead in butter. Roll between palms into crumbs.

Roll yeast dough on floured surface to baking tray size, place on parchment-lined tray. Spread jam, top with crumble. Bake in preheated oven for 40-45 minutes. Remove cake, cool, cut into pieces.
