Ingredients
- 500 g quince
- 1 untreated lemon
- 2 cm ginger
- 2 cloves of mace
- 350 g sugar
- 800 ml Korn (rye spirit)

Rub the quinces with a cloth, wash them, quarter them, remove the seeds and cut into pieces. Wash the lemon hot, dry rub it, and peel off the zest (without the white pith). Peel the ginger and slice it thinly. Combine the lemon zest, quince pieces, mace cloves, and sugar in a wide vessel, then pour in the Korn. Seal tightly and let steep for about 3 weeks in a cool, dark place.

Afterward filter the mixture and pour into bottles or carafes. Let it rest for another week before serving.
