Quince Casserole

Ingredients
- 600 g quines
- 2 tbsp butter
- 1 small organic orange
- 50 g unsalted pistachio nuts
- 1 Pomegranate
- 200 g crème fraîche
- 2 Eggs
- 50 g honey
- 150 g Greek yogurt
- 1 tbsp cocoa powder

Wash, peel, quarter the quines and remove seeds. Slice flesh into thin strips. Heat butter in a pan. Add quines and sauté for 5 minutes over medium heat.

Distribute quines into four ramekins. Rinse orange hot, pat dry, grate zest finely and squeeze juice. Finely chop pistachio nuts. Halve the pomegranate and squeeze juice of half a pomegranate. Mix orange zest and juice, pistachios, pomegranate juice, crème fraîche, eggs and honey; spread over quince strips.

Meanwhile, remove seeds from remaining pomegranate half. Stir seeds with yogurt, dust with cocoa, and serve atop finished gratin.
