Ingredients

  • 3 quinces
  • 1 Vanilla bean
  • 30 g ginger
  • 4 untreated oranges
  • 100 g coconut palm sugar
  • 3 cinnamon sticks

    Clean, wash and quarter the quinces, removing the seeds. Prick each quarter several times with a fork. Split the vanilla bean lengthwise and scrape out the seeds. Peel the ginger and slice it thinly. Place the quince quarters cut-side down in a rectangular baking pan.

    Rinse the oranges hot, pat dry, peel strips of zest with a paring knife and squeeze out the juice. Combine orange juice, coconut palm sugar, vanilla seeds and cinnamon sticks in a saucepan and bring to a boil; then pour over the quinces. Sprinkle orange zest and ginger slices on top, cover with foil and bake in a preheated oven at 220 °C (200 °C fan‑forced; gas: level 3) for about an hour until the quinces can be easily pierced.
