Ingredients

  • 1.5 kg quinces
  • 0.5 kg apples
  • 1 kg pectin sugar (2:1)
  • crystal sugar

Instructions

    Preheat the oven to 160°C (320°F) with upper and lower heat.

    Quarter the quinces and apples, remove the pits. Place them on a baking sheet lined with parchment paper and bake in the preheated oven for 1 hour. Remove and let cool. Peel the apples and quinces, discard the core shells, cut into small pieces, then puree. Mix the puree with the pectin sugar, heat, and simmer for five minutes.

    Spread the mixture to a thickness of 1 cm on a parchment-lined tray and allow it to dry for 2–3 days. Cut the dried mass into bite‑sized diamond shapes and coat the pieces in crystal sugar. Store airtight.
