Quince Jam with Lemon
Fresh quince and lemon can be used to make homemade quince jam with lemon instead of buying it. Use fresh quinces and lemons to cook your own quince jam.
Ingredients
- 1.5 kg quince (yields about 1000 ml juice)
- 1 lemon (juice)
- 1 kg gelatin sugar

Wash the quinces thoroughly, remove the stem and blossom, and cut them into cubes with the peel and core intact. Place in a pot and cover with 1.5 liters of water. Add the lemon juice and bring to a boil. Cook until soft for about 45 minutes, stirring occasionally.

Line a large sieve with a damp muslin cloth, place it over a big pot, pour the cooked mixture through it, and let the liquid drain. If necessary, press lightly or weigh down to extract all the juice. Allow the quince juice to cool completely. Measure the juice (about 1.2 L), pour into a pot, and mix with almost the same amount of gelatin sugar (approximately 200 g less). Stir until dissolved, bring to a boil, and simmer for about 4 minutes while bubbling.

Remove the pot from heat. Fill clean jars to the brim and seal immediately.
