Ingredients
- 1.5 kg quines
- 300 ml elderflower syrup
- 250 g gelatine sugar (2:1)
- 175 ml orange juice
- 1 tsp vanilla essence
- 1 untreated lemon (juice and zest)

Peel the quines, quarter them, remove the seeds, and cut into small cubes. Place in a pot with the syrup, sugar, orange juice, vanilla essence, lemon juice and zest, then bring to a boil while stirring.

Simmer for 10-15 minutes until soft but still chunky, then fill prepared jars. Seal well and let cool.
