Ingredients
- 2 kg quince
- Sugar (as needed)
Instructions
-
1.
Rinse a few screw-top jars in hot water, let them drain on a dish towel.
-
2.
Peel the quinces, quarter them, cut into cubes, place in a large pot and add enough water to cover them by about 2 cm. Bring to a boil and simmer until soft, approximately 40 minutes.
-
3.
Soak a coarse muslin cloth in water, wring it out, lay over a fine hair sieve. Pour the fruit with juice through it and let drain without pressing the fruit.
-
4.
Measure the juice, pour into a large pot and simmer uncovered for about 5 minutes, skimming off any foam that forms immediately.
-
5.
Calculate sugar: 250 g sugar per 250 ml of juice.
-
6.
Gradually add the sugar while stirring until dissolved. Continue cooking the mixture to the gel point.
-
7.
Turn the screw-top jars over, distribute the drained fruit into the jars, using a metal measuring cup or ladle to fill the very hot jam into the jar, clean the rim, seal immediately and place on the clamp (to create vacuum). Repeat until all jam is filled. After about 5 minutes the jars can be turned back.
