Quince Jam with Ginger

You can prepare quince jam with ginger in the fall and enjoy it all year round. The ginger gives the jam a spicy note.

Ingredients

  • 1 kg quince
  • 60 g ginger
  • 500 g gelatin sugar from raw cane sugar (2:1)

    Rub the quinces, wash them and cut into pieces. Tie the seeds in a muslin cloth. Peel the ginger and cut it into small pieces. Combine everything with about 1 l of water and simmer for about 30–40 minutes until the fruit pieces are soft, then let cool.

    Line a sieve with a muslin cloth and pour the quince mixture through it. Catch the juice, measure out 750 ml and mix with sugar. Bring to a boil and cook until the gel test (about 4–6 minutes) is passed. Pour hot into clean jars, seal immediately and set upright for about 10 minutes.
