Ingredients
- 2 kg quince
- 1 lemon (juiced)
- 4 tbsp elderflower syrup
- 1 kg gelatine sugar (1:1)
- white bread (for serving)

Rub the quinces with a cloth, wash them. From half remove stems and flower buds, cut into cubes with peel and core. Put in a pot, cover with 600 ml water, add lemon juice, bring to boil. Cook open for about 45 minutes until soft. Meanwhile peel remaining quinces, remove cores, finely chop flesh in a food processor with blade. Add to a large pot with elderflower syrup.

Place a cloth over a large sieve and set on the pot. Pour quince pieces with juice into the sieve, let drain. Press juice from fruit pieces using the cloth.
