Pickled Bell Peppers

Ingredients

  • 1 kg bell peppers (yellow and red)
  • Salt
  • 3 Garlic cloves
  • 4 tbsp capers
  • 10 thyme sprigs
  • 250 ml wine vinegar
  • 1 untreated lemon
  • 50 g sugar
  • 2 Bay leaves

Instructions

    Wash the bell peppers, halve them, remove seeds and inner membranes. Quarter and thinly peel with a paring knife. Peel the garlic and slice it. Blanch the bell peppers in boiling salted water for 2-3 minutes until firm, then drain.

    Boil 250 ml water with lemon zest and juice, vinegar, sugar, bay leaves and 1/2 tsp salt. Pour over the bell peppers until covered, seal well and let cool.
