Ingredients

  • 50 g almonds
  • 50 g liquid blossom honey
  • 50 g Brown sugar
  • 50 g sugar
  • 1 tsp cinnamon
  • 0.5 tsp ground bourbon vanilla
  • 1 tsp ground coriander seeds
  • 750 ripe quines
  • 150 g soft butter
  • 50 g liquid blossom honey
  • 50 g Brown sugar
  • 1 pinch sea salt
  • 150 g Whole wheat flour
  • 0.5 untreated orange (zest)
  • 2 tsp Baking powder
  • 2 Eggs
  • butter (for the pan)

Instructions

    Grease the tart pan. In a skillet, combine almonds, honey, sugar, cinnamon, ground vanilla and coriander; stir over high heat for about 1 minute until boiling. Spread the mixture evenly in the pan. For the dough, beat butter with honey, sugar and salt until fluffy.

    Mix flour with orange zest and baking powder, then gradually add eggs alternately while stirring until the dough becomes creamy. Preheat oven to 200°C. Wash quines, quarter them, peel thinly and remove seeds.

    Cut quarters into strips and arrange over almond base. Pour dough over quines and smooth. Bake tart in oven for about 25–30 minutes until golden brown. Let it rest briefly with the door open, then carefully lift out.
