Ingredients
- 300 g chicken breast fillet
- 1 pizza base (pre-made refrigerated product e.g., Back’n Roll)
- 150 g herb crème fraîche
- 2 tbsp tomato or paprika paste
- 100 g fresh chanterelle mushrooms (or substitute with champignons)
- 1 shallot (finely diced)
- 1 bunch chives
- Salt
- Pepper (from the grinder)

Cut the chicken into small pieces, season with salt and pepper, and quickly fry in hot oil until crisp. Slice the chanterelles, then sauté them with the shallot cubes in hot butter for a short time, seasoning with salt and pepper. Roll out the pizza base and cut into small squares.

Whisk the crème fraîche with tomato paste, spread on each square, top with chicken and chanterelles, bake in the oven at 200°C for about 10-12 minutes. Sprinkle with chive curls and serve as small bites for an aperitif.
