Ingredients
- 800 g cooked potatoes (from the day before)
- 1 EL oil
- 1 onion
- 1 bunch spring onions
- 7 eggs
- Salt
- Pepper (freshly ground)

Peel the potatoes and cut them into large cubes. Peel and finely chop the onion. Trim the spring onions and slice them diagonally into rings. Heat the oil in a pan and sauté the onion and spring onion rings. Add the potato cubes and fry everything until well browned.

Whisk the eggs in a bowl and season with salt and pepper. When the potatoes are crispy, pour the egg mixture over them and let it set. Before serving, add more pepper and serve directly from the pan.
