Quick Pea Soup

Quick pea soup from Spoonsparrow is a great recipe when you want something fast and tasty.
Ingredients
- 200 g starchy boiling potatoes
- 1 onion
- 1 tbsp butter
- 500 g peas (fresh or frozen)
- 700 ml vegetable broth
- 1 handful mint
- 250 ml Whipping Cream
- Salt
- pepper (ground)
- 1 tbsp Lemon Juice

Peel, wash and dice the potatoes. Peel and chop the onion. Sauté the potato cubes and onions in hot butter, add the peas, pour in the vegetable broth and bring to a boil. Cook everything gently for 10-15 minutes until tender.

Rinse the mint, shake dry and set aside a few leaves for garnish. Cut the remaining mint into fine strips. Whip the cream stiffly.

Take about one ladle of peas from the soup and finely puree the rest of the soup. Return the peas and stir in the mint and cream (reserve 4 tbsp for garnish). If needed, add more broth and season with salt, pepper and lemon juice.

Serve on plates garnished with the remaining cream and mint.
