Pea Soup with Mint

A delicate pea soup with mint from Spoonsparrow: this fine soup delights guests and is perfect as an appetizer.
Ingredients
- 500 g peas
- 1 handful mint leaves
- 1 stalk leek
- 150 g celery root
- 1 onion
- 1 Garlic clove
- 2 tbsp butter
- 800 ml vegetable broth
- 100 ml heavy cream (at least 30% fat)
- Salt
- ground pepper
- nutmeg

Wash and drain the peas. Wash the mint and shake dry. Clean and slice the leek into rings. Peel and finely dice the celery root, onion, and garlic; sauté them with the leek and peas in hot butter. Add the broth and simmer gently for about 20 minutes.

Add the cream and mint to the soup and blend until smooth. Strain through a sieve and, if desired, reduce slightly or add more broth. Season with salt, pepper, and nutmeg, then serve the pea soup with mint in cups.
