Pea Cream Soup with Ham

Pea cream soup with ham from Spoonsparrow tastes not only good for dinner!

Ingredients

  • 1 onion
  • 200 g waxy potatoes
  • 150 g smoked turkey ham
  • 1 tbsp butter
  • 400 g green peas (fresh or frozen)
  • 850 ml vegetable broth
  • Salt
  • Pepper
  • 3 tbsp herbs (e.g., parsley, basil, mint)
  • 100 ml heavy cream
  • Nutmeg (freshly grated)

Instructions

    Peel and dice the onion and potatoes. Slice the ham into thin strips. In a pot, melt butter over medium heat and fry the ham for 3 minutes; remove and set aside. Add the onion and potatoes to the pot and sauté for 2 minutes over medium heat. Add the peas and deglaze with broth, season with salt and pepper, and simmer over medium heat for about 20 minutes. Meanwhile, wash the herbs, dry, finely chop, and add them halfway through cooking, stirring in.

    Blend the soup until smooth, stir in the cream, and season with nutmeg. Sprinkle with reserved ham pieces and serve.
