Ingredients

  • 750 g lean cross ribs
  • 1 tbsp spiced meat broth
  • 1 bunch soup greens
  • 1200 g fresh peas
  • 1 onion
  • 2 tbsp oil
  • salt and freshly ground pepper to taste
  • 1 bunch parsley

Instructions

    Rinse the cross ribs and place them in a pot with 1.5 l water and the spiced meat broth, then bring to a boil. Skim once and cover; simmer over medium heat for 1 hour.

    Clean, wash, and dice the soup greens. Remove peas from their pods. Peel and dice the onion.

    Heat oil in a pot. Sauté the onion and soup greens. Remove the meat from the broth and add the broth to the greens (strain if desired). Simmer for 10 minutes. Add the peas and cook for another 20 minutes (frozen peas only need about 5 minutes).

    Cube the meat. Season the soup with salt and pepper. Rinse, dry, and finely chop the parsley. Add the parsley and meat to the soup and heat for about 10 minutes. Taste again if needed.
