Quiche with Tomatoes, Cheese and Arugula

Ingredients
- 120 g cold butter
- 200 g Flour
- 1 pinch salt
- 1 egg
- flour (for working)
- soft butter (for the baking tin)
- 300 g cherry tomatoes
- 2 handfuls arugula
- 200 ml whipping cream
- 70 g grated Emmental cheese
- 3 eggs
- Salt
- Pepper
- a splash lemon juice
- 300 g sheep cheese
Instructions

Knead all dough ingredients quickly together, shape into a ball and wrap in cling film; chill for about 1 hour.

Wash the tomatoes, drain and halve them. Rinse the arugula, dry and roughly chop it. Whisk the cream with Emmental and eggs, seasoning with salt, pepper and lemon juice.

Preheat the oven to 180°C fan.

Roll out the dough on a floured surface slightly larger than the tin. Line the quiche tin with the dough. Pour the egg mixture in, add the arugula and stir lightly. Drain the sheep cheese, break into pieces and press into the cheese mixture. Place the tomatoes cut side up on top of the quiche and gently press them down.

Bake for about 50 minutes until golden brown. Remove from oven and serve warm or at room temperature.
