- 250 g puff pastry
- 3 stalks leek (ca. 750 g)
- 250 g sour cream
- 200 ml whipping cream
- 75 g grated cheese (e.g., Bergkäse)
- 4 eggs
- 200 g salmon trout fillet (skinless)
- Salt
- pepper (ground)

Preheat the oven to 200°C fan-forced. Roll out the pastry into a circle and line the baking tin with it.

Wash, trim, halve lengthwise, and cut the leeks into slightly diagonal pieces. Sauté in hot butter for 2-3 minutes until translucent, then remove from heat. Whisk together the sour cream, whipping cream, cheese, and eggs; season well with salt, pepper, and nutmeg. Wash the trout, pat dry, and slice into strips. Spread the leeks over the pastry base, pour the egg‑cream mixture on top. Bake in the oven for 40–50 minutes until golden brown, then serve hot or warm.
