Ingredients

  • 150 g flour
  • 100 g butter
  • 1 egg
  • 1 tsp salt
  • flour (for working)
  • 200 g smoked bacon
  • 1 vegetable onion
  • 4 eggs
  • 150 ml milk
  • 250 ml whipping cream (at least 30% fat content)
  • 150 g crème fraîche
  • 75 g grated Gruyère cheese
  • Salt
  • Pepper (from the grinder)

Instructions

    Knead a shortcrust pastry from flour, butter, egg and salt, wrap in foil and chill for 30 minutes. Roll out thin on floured surface and place into the pan, lifting an edge. Preheat oven to 200°C fan.

    Cut bacon into small cubes. Peel and dice onion. Beat eggs. Mix milk with cream, crème fraîche, eggs, cheese, onions and bacon; season with salt and pepper and pour over pastry. Bake in hot oven for 40‑45 minutes until golden brown. Serve hot or warm.
