Quiche with Cod

Ingredients
- 250 g flour
- 125 g cold butter
- 1 pinch salt
- 1 egg
- 500 g fresh spinach
- 1 onion
- 50 g butter
- 1 Garlic clove
- Salt
- black pepper (freshly ground)
- nutmeg (freshly grated)','500 g cod fillet','lemon juice','2 bunches fresh dill','220 g sour cream','2 eggs','fat (for the pan)

Sift flour onto a work surface, mix in salt and create a well in the center. Cut cold butter into small pieces and distribute around the well; add the egg, about 50 ml lukewarm water, and use a knife to cut through all ingredients until fine crumbs form. Quickly knead with hands into dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

Meanwhile clean and rinse spinach, then drain in a sieve. Peel and finely dice the onion. Melt butter in a pot and sauté the onion until translucent. Peel the garlic clove and press it into the onion mixture; cook briefly. Add the spinach and simmer over medium heat for about 5 minutes, seasoning with salt, pepper and nutmeg.

Rinse the cod fillet under cold water, pat dry with paper towels, and cut into small pieces. Drizzle with lemon juice, season with salt and pepper. Wash, shake dry and chop the dill. Whisk sour cream with eggs and dill, then season with salt and pepper.

Roll out the dough on a floured surface and line a greased 26 cm quiche tin.

Place the drained spinach on the dough, top with cod pieces, and spread the dill cream over it. Bake in a preheated oven at 200°C (400°F) on the middle rack for about 30 minutes.
