Cauliflower Quiche

Ingredients
- 125 g low‑fat quark
- 5 tbsp sprouting oil
- 1 pinch salt
- 1 egg
- 250 g flour
- 0.5 tsp Baking powder
- 250 g Broccoli
- 250 g cauliflower
- 1 Spring onion
- 250 g whipping cream
- 1 yolk
- 1 egg
- 100 g grated Gruyère cheese
- Salt
- ground pepper
Instructions

Whisk quark, oil, salt and egg until smooth; fold in flour and baking powder, then knead with the mixer hook into a smooth dough. Chill for about 30 minutes.

Grease a baking tin and dust with flour. Roll out the dough, place it in the tin, shape a rim and prickle the bottom with a fork several times.

Wash broccoli and cauliflower and cut into florets. Finely chop the spring onion. Blanch broccoli and cauliflower in boiling salted water for 4 minutes, shock in cold water, drain well. Mix cauliflower, broccoli and spring onion in a bowl.

Whisk egg, yolk, cream, cheese, salt and pepper thoroughly; combine with the vegetables. Spread everything over the dough and bake at 180°C for about 45 minutes until golden brown.
