A quesadilla with salsa brings Mexican flair to the home kitchen.

Ingredients

  • 30 g shredded cheese (30% fat in milk)
  • 40 g cream cheese (2 tbsp; 20% fat in milk)
  • ground coriander
  • Salt
  • Pepper
  • Cayenne pepper
  • 2 wheat tortillas
  • 20 g baby spinach (1 handful)
  • 50 g avocado
  • 2 Tomatoes
  • 1 tsp Lime juice

Instructions

    Process the cheese with cream cheese into a creamy mixture. Season with coriander, salt, pepper and cayenne pepper.

    Spread half of the cheese mixture on one tortilla. Wash and dry the spinach, then spread it over the tortilla. Place the second tortilla as a lid.

    For the salsa, dice the avocado flesh. Clean, wash and finely dice the tomatoes. Mix tomato and avocado cubes in a bowl with salt, pepper and lime juice.

    Cook the quesadilla in a hot non‑stick pan on each side at medium heat for 3–4 minutes. Cut into pieces and serve on a plate with remaining cheese cream and salsa.
