Flatbread with Cheese and Arugula Filling

Ingredients

  • 600 g cooked potatoes
  • 250 g arugula
  • 8 tortilla flatbreads
  • 100 g shredded cheese (e.g., cheddar)
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp oil

Instructions

    Peel the potatoes and slice them. Wash, trim, and shake dry the arugula.

    Place each tortilla in a hot, non‑stick skillet with a little oil. Top with a quarter of the potato slices and arugula. Sprinkle some cheese, salt, and pepper, then lay another tortilla on top. Press lightly and cook 1–2 minutes until golden brown. Flip using a plate and cook the other side until golden brown and the cheese has melted. Repeat with the remaining ingredients to make four more quesadillas and serve each cut into quarters.
