Quarkstrudel

Ingredients
- 250 g fine flour (e.g., Wiener Grießler)
- 1 EL vinegar
- 1 egg
- 100 g melted butter
- 3 eggs
- 200 g sugar
- 1.2 kg quark
- 50 ml whipping cream
- 60 g sultanas

Sift the flour into a bowl. Add the vinegar, the egg and about 2 EL of melted butter. Knead with ca. 100 ml lukewarm water into a smooth dough.

Divide the dough into two pieces and beat vigorously on the work surface for about 10 minutes until it is smooth and elastic.

Brush the two dough balls with some butter. Rinse a ceramic bowl or pot with hot water and place over it. Let the dough rest for about 1 hour.

Separate the eggs. From 3 EL butter, sugar, yolk, quark and cream whisk a filling. Add the sultanas and mix in.

Beat the egg whites into stiff peaks. Gently fold them onto the filling with a whisk.
