Ingredients

  • 2 cubes yeast
  • 200 g sugar
  • 0.25 l milk
  • 800 g flour
  • 50 g sugar
  • 300 g butter
  • 1 tsp orange zest
  • 300 g quark
  • 100 g rum raisins
  • 100 g liquid butter
  • powdered sugar

Instructions

    Crush the yeast into a small bowl, add 1 tsp sugar, 50 ml of the milk and 1 tbsp flour, mix together and cover in a warm, draft-free place for 20 minutes. Then add the remaining ingredients except the raisins to a bowl and knead vigorously into a smooth dough. Transfer to a lightly floured surface and work the dough with your hands for at least 15-20 minutes. Return to the bowl and let rise for at least 1 hour until doubled in volume. Drain the rum raisins, return the dough to the floured surface and fold the raisins in.

    Divide the dough into two halves and shape each half into a stollen loaf. Place on a baking sheet lined with parchment paper and allow to rise again for 1 hour. Bake in a preheated oven at 180°C (356°F) for about 1 hour. Brush hot with butter, let cool, then dust generously with powdered sugar.
