Quark with Apple Sauce

Ingredients

  • 500 g apples (4 apples)
  • 125 ml white wine
  • 125 ml water
  • 1 tsp freshly grated ginger
  • 1 tbsp honey
  • 250 g quark
  • 0.5 lemon (juice and zest)
  • 2 tsp Honey
  • 5 tbsp heavy cream
  • 4 tbsp brittle
  • 1 tbsp flaxseed
  • 1 tsp butter

Instructions

    Peel the apples, quarter them, remove the cores, and cook with a little water just until soft; then let cool slightly, add honey, and puree.

    Stir together quark, honey, lemon juice and zest, and blend smoothly with some cream.

    Dry roast flaxseed in a pan until the seeds start to pop. Immediately sprinkle brittle and cinnamon over it, allow them to melt briefly, then remove from heat, stir in a teaspoon of butter, and set aside to cool. Spread apple sauce into four tall glasses and pour the lemon quark over it; refrigerate. Before serving, crumble flaxseed-brittle mixture on top.
